Lobster Quiche




3 Tbsp all-purpose flour
1 1/2 green onion, finely chopped
1 1/2 cup shredded swiss cheese
1/2 cup shredded parmesan cheese
1 pinch freshly ground nutmeg
2 1/2 cups half and half
1 tso Tobasco sauce
Salt and pepper to taste
1 1/2 cups cooked lobster meat, cut into bite-sized pieces

Preheat oven to 400 degrees. Butter the inside of a 10-inch glass pie dish or ceramic quiche pan.

In a large mixing bowl, combine the flour with the green onions, cheeses and nutmeg, tossing gently.

Add lobster meat and stir gently until all ingredients are combined. Pour into prepared pan. Bake approximately 30-35 minutes or until filling is set and knife inserted into the center comes out clean.

Allow quiche to rest for 12-15 minutes before cutting.
