
Salami Cups
3 eggs, beaten
1/4 cup heavy cream
1/4 cup grated parmesan (not the canned cheese)
1 10 oz pkg frozen spinach, thawed and drained well.
3 cloves garlic, chopped
Salt and pepper to taste
24 slices of salami or pepperoni (if you prefer spicier foods)
Preheat oven to 350 degrees.
Mix all ingredients (except meat) together. Place a slice of meat into a mini muffin tin. Fill the meat "cup" with the egg, spinach mixture.
Bake at 350 for 12-15 mins. Serve warm or at room temperature.
Can be made a day ahead and stored in an airtight container in the refridgerator.
