Marvelous Mushrooms
1 pound mushrooms
10 garlic cloves
2 Tbsp olive oil
2 Tbsp soy sauce
1 Tbsp finely chopped fresh parsley
Wipe the mushrooms and cut off stems. If mushrooms are large, cut into quarters. Finely chop the garlic.
Heat the oil in a large saute pan. Add the garlic and cook over medium heat, stirring occationally, until golden brown, 4-6 minutes. Be careful not to burn the garlic.
Increase heat to high and add the mushrooms. Cook, stirring, for 2-3 minutes, just until mushrooms begin to color. Sprinkle on soy sauce and garnish with parsley.
