Broccoli Cheese Soup
Serves 4



3 T butter
1 med onion finely chopped
2 cups chicken broth
2 lbs fresh broccoli chopped
1/4 tsp crushed red pepper
1/2 cup dry white wine
1 8 oz pkg cream cheese cubed
2 cups cheese shredded (swiss, monterey, cheddar or a combination)
1/2 parmesan cheese
1 qt heavy cream
2 Tbsp fresh parsley
salt and pepper

Melt butter in stockpot.  Saute onion about 5 minutes.  Add chicken broth, broccoli, and crushed red pepper.  Bring to a boil then reduce heat and simmer for 10 minutes til broccoli is tender

Blend the soup with a hand mixer or transfer to a food processor or blended and puree til smooth.

Transfer back to stockpot and stir in wine.  Simmer for 10 minutes.   Add all cheeses, heavy cream, parsley, salt and pepper. 

Stir constantly until cheeses are melted and fully incorporated into the soup. Do not allow soup to boil or the cream will break down.
